Week 14—Coconut Cake Supreme!

Coconut Cake Supreme Recipe

  • ¾ cup butter
  • 2 cups sugar
  • ¾ cup grated fresh coconut
  • 2 ½ cups flour
  • 4 tsp. baking powder
  • 1 cup coconut water (make up difference with milk)
  • 4 egg whites
  • Coconut frosting

Directions

Preheat oven to 350 degrees. Butter and flour three 8-inch, or two 9-inch round pans. Cream butter and sugar until light and fluffy. Add grated coconut. Sift together flour and baking powder. Alternately add flour and coconut water to creamed mixture. Beat egg whites until they form soft peaks. Fold into batter. Pour batter into pans. Bake for 20 to 30 minutes. Top with coconut frosting. Makes 16 servings.

Coconut Frosting Recipe

  • 1 cup sugar
  • 1/3 cup boiling water
  • ¼ tsp. cream of tartar
  • 2 tsp. light corn syrup
  • 2 egg whites
  • 1 tsp. vanilla
  • 2 cups grated coconut

Directions

In a double boiler mix sugar, boiling water, cream of tartar, and corn syrup. Stir until sugar dissolves. Add egg whites and remove from heat. Beat mixture on high speed for exactly 5 minutes. Return to heat. Keep water simmering and heat mixture exactly 4 minutes longer. Add vanilla. Frost each layer and sprinkle with grated coconut. The frosting will keep in an airtight container in the refrigerator up to one week.

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes. 

Because we have this rich Hawaiian heritage, I started this running blog that features recipes with a Hawaiian flair. If you love collecting recipes, please check back so that you can collect your favorites. These will be recipes I have collected from old Hawaiian cookbooks, family, and friends that have been willing to share their family secretes. I will limit these recipes to those with ingredients that can be found almost anywhere.
