Party People’s Pico

Aloha,

Let’s all just take a step back for a minute and exclaim from the top of our mountain, “How incredible this experience is!” Ok. That felt great!

Now, what you’re going to want to do is get your head in the game and get serious. Not too serious of course because where’s the fun in that? But seriously, sharpen your knives and chopping skills because this Pico de Gallo, or Vegetarian Ceviche celebrates life, health, longevity, and creativity. Or something like that, stay with me 😉

So, that’s the story, I know most recipes that I parse are about 4-5 pages of a life story, and then FINALLY comes the ingredients list as I’m about ready to throw everything out the window.

  • 1 small jalapeno
  • 1/2 medium red onion
  • 3 cloves garlic
  • 1 large green pepper
  • 1 medium poblano pepper
  • 1 large Japanese cucumber
  • 5 medium tomatoes
  • 1 lime halved and juiced
  • 1 T of sea salt

Use what you’ve grown yourself or buy at a local farmers market or buy organic or buy what you can. Either way, this Party People’s Pico will be enough for 6 people to get the nutrients of these vegetables racing through their bodies and bettering their minds, bodies, and spirits. Plus, how fun is it to finely dice all sorts of veggies? Go on now, you know what to do, the party is just waiting for you!
