Tastes of Hawaii Recipe – Hawaiian Sweet Tea and Hawaiian Coffee Chuck Roast From Kauai’s Old Plantation Days
Week 49 – Hawaiian Plantation Sweet Tea. A pleasant afternoon refreshment!
Hawaiian Plantation Sweet Tea Recipe
- 1 quart barely boiling hot water
- 4 orange pekoe tea bags
- 1 quart ice cold water
- 1 (16 ounce) can pineapple juice
- 1/2 cup simple syrup (optional)
Pour the barely boiling hot water into a large pitcher, and add the tea bags. Steep the tea 3 to 4 minutes. Remove the tea bags, and pour in the ice water. Pour in the pineapple juice. Refrigerate until thoroughly chilled, 1-2 hours. Pour the tea over ice and garnish with 1 fresh pineapple, cored and cut into spears. Refreshing and enjoyable!
Simple Syrup Recipe
- 1 cup white sugar
- 1 cup water
Combine sugar and water in a medium sauce pan. Bring to a boil, stirring, until sugar has dissolved. Allow to cool.
Hawaiian Coffee Chuck Roast Recipe
- 4 lbs. Chuck roast
- 1 clove garlic
- 1/2 t. garlic salt
- 2 cups brewed Hawaiian coffee
- 1 large onion
- 1 cup vinegar
- 2 Tsp. salad oil
- 2 cups water
Slice onion and garlic. Cut slits in roast and place slices of onion and garlic into slits. Pour vinegar over roast, cover and marinate overnight in refrigerator. Remove roast from vinegar. Sprinkle with garlic salt, brown in hot oil in Dutch oven or heavy skillet with cover until golden brown. Add coffee and water and simmer over low heat for 3 to 5 hours or until tender. Thicken broth with flour to make a rich gravy of desired thickness.
Note: Vegetables like carrots, celery, green bell peppers or potatoes may be added during the last half hour of cooking.

The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.
