Tastes of Hawaii Recipe – Super Simple Keiki Chocolate Drop Meringue Cookies From Kauai’s Old Plantation Days

Week 45 – Super Simple Keiki Chocolate Drop Meringue Cookies (Kids can make these with a little help from Grandma!)

Keiki Chocolate Drop Meringue Cookies Recipe

  • 2 egg whites
  • 1/2 cup granulated sugar
  • 1 t vanilla
  • 1 cup chocolate chips

Directions

Beat egg white until they stand in peaks, adding sugar gradually. Fold in chocolate chips and vanilla. Drop by teaspoonful onto aluminum foil lined cookie sheet. Bake one hour at 225 degrees. Cool before removing from foil.

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.

Not sure what it is about Kauai and meringue cookies?!? LOL Every year I visit friends on Kauai and we stay up at Camp Sloggett in Kokee for the Banana Poka festival. One of the Kauai ladies always brings the most ono meringue cookies. I can’t get enough of them!
