Tastes of Hawaii Recipe – Hana Haupia From Kauai's Old Plantation Days

Week 7—Hana Haupia!

Hana Haupia Recipe

(This is an authentic Plantation Day recipe)

Traditional luau dessert. Sweet and simple, firm little pudding square to eat with fork or fingers.

  • 1/3 cup sugar
  • 6 Tbsp. cornstarch
  • ¾ cup water
  • ½ cups coconut milk (today you can buy this in a can)

Directions

Combine sugar and cornstarch; stir in water and blend well. In a saucepan combine coconut milk and sugar mixture; cook and stir over low heat until thickened. Pour into 8-inch square pan and chill until firm. Cut into 2 inch squares. Makes 16 servings.

Plantation Coconut Milk Recipe

(if you can not find coconut milk at your store and homemade is always better!)

  • 1 fresh coconut
  • 1 ½ cups boiling water

Directions

Husk fresh coconut. Pierce two of the coconut eyes and drain off the liquid. Crack coconut open with hammer. Remove meat by inserting top of a table knife between coconut meat and shell; twist knife to separate meat from shell. Coarsely grate coconut to make 3 cups. Pour boiling water over grated coconut and let stand 30 minutes. Strain through a cheesecloth; squeeze to remove all liquid. Makes 1 ½ cups…

As mentioned in my first recipe blog, Hawaii is a wonderful mix of cultures and each of these peoples brought with them their customs and foods. The early plantation days saw these combining cultures creating foods that are unique only to Hawaii. We thank these early pioneers who planted and nurtured these plantation fields and created many of these amazing recipes.

Because we have this rich Hawaiian heritage, I started this running blog that features recipes with a Hawaiian flair. If you love collecting recipes, please check back, so that you can collect your favorites.

These will be recipes I have gotten from old Hawaiian cookbooks, family, and friends that have been willing to share their family secrets. I am going to try to limit these recipes to those with ingredients that can be found almost anywhere so you do not have to shop for Poi or other food items that you can only find here in Hawaii!
