Living a Healthy Hawaii Life on the Big Island – Healthy Taco Recipe

My Kona doctor suggested I watch the documentary “Forks Over Knives.” I had high blood pressure – nothing major, but not in line with the Hawaii lifestyle.

It’s great to talk about things that impact your life, especially with the people you love and respect, so my son came across a couple recipes on the web for “sour cream” with no dairy. Instead of dairy it used blended cashews.

Although the jury was still out on whether that would taste anything like real sour cream, we decided to give it a try when taco night came around. My family made these tacos and they were the best tacos ever. Yes, my meat-a-tarian husband even loved them. The trick to the “sour cream” is to follow the recipe below.

Taco Ingredients

  • Corn shells
  • Black beans (drained and heated)
  • Fresh chopped sweet peppers
  • Fresh chopped Maui onions
  • Fresh avocado
  • Salsa (okay fresh or prepared)
  • Lettuce
  • “Sour cream”

“Sour Cream” Recipe

  • Water soaked cashews
  • Apple cider vinegar
  • Lemon juice
  • Water for consistency and a high speed blender
