During the 1990’s, Hawaii Chefs such as Peter Merriman and Roy Yamaguchi developed the concept of Pacific Rim Cuisine. During that time, Hawaii was importing more than 80 to 90% of its produce while the agriculture industry was at a standstill with the closure of sugar cane plantations.
A movement to strengthen family farms here on the Big Island, and to promote sustainability, these two chefs and others made a commitment to incorporate locally sourced produce and meats into their menus. Twenty years later, the movement for locally sourced produce has swept across our country, including Hawaii.
Under the Bodhi Tree’s Great Assortment of Healthy Baked Goods
For over 17 years Executive Chef Stephen Rouelle played a key part in the Fairmont Orchid’s culinary team. There at the Fairmont Orchid, Chef Rouelle and former Banquet Manager Abraham Goo began to strategize their dream of opening a new restaurant featuring delicious vegetarian cuisine made from fresh, locally sourced ingredients.
Taking a leap of faith, they both left their long-time careers with the Fairmont Orchid to embark on an entrepreneurial journey. Today, Friday, August 15th, Goo and Rouelle will celebrate their accomplishment at the grand opening of their new restaurant, Under the Bodhi Tree.
A Sneak Peek at What’s Being Offered
Yesterday, some friends and I had the opportunity to enjoy a healthy meal at Under the Bodhi Tree. While dining, it was a pleasure to meet General Manager Abraham Goo and Chef Rouelle. According to Goo, “We are here to serve the community the freshest locally grown produce the Big Island has to offer, utilizing what is around us to bring vegetarian, vegan, and raw meals to you daily in a sustainable and eco-friendly manner. 100% of what we serve comes from within 100 miles of our restaurant.”

Under the Bodhi Tree takes vegetarian, vegan, and raw cuisine to an entirely new level. Serving breakfast, lunch, and dinner, even the most finicky eater will be excited about their menu selection. Three Bean Vegetable Chili and Island Corn, Reuben Garden Sandwich, Kung Fu Tofu, and Raw Thai are just a few examples of what’s included on the menu.

In addition, Under the Bodhi Tree serves Kombucha elixirs on tap and incredible baked goods. I have to say that I thoroughly enjoyed my lunch and highly recommend this restaurant to anyone who seeks a healthy meal. This restaurant is a fantastic addition to the Kohala Coast.
