Week 23—Famous Chocolate Mac Nut Brittle Flan from the Hawaii Prince Hotel! (This recipe helped make this hotel famous!)
Famous Chocolate Macadamia Nut Brittle Flan Recipe From The Hawaii Prince Hotel
- ½ lb. sugar
- 1 lb. margarine
- ½ tsp. cinnamon
- 1½ lbs. all purpose flour
- ¼ tsp. lemon extract
- ¼ tsp. vanilla extract
- 2 oz. egg whites
Directions
Lightly mix together sugar and margarine. Combine sifted flour. Add remaining ingredients. Do not over mix. Roll out chilled dough and place in two 9″ pie shells. Bake at 400 degrees until golden brown.
Brittle Filling Recipe
- 1 ½ cups sugar
- 2 Tbsp. light corn syrup
- 5 ½ oz. butter
- 1 cup macadamia nuts
Directions
Combine sugar, light corn syrup, and enough water to make a wet sand consistency. Boil until sugar carmalizes and turns a medium amber color. Add butter and mix thoroughly. Turn off heat, add cream slowly; be careful as it will splatter if too much is added at one time. Add nuts. Pour into your pre-baked shells that are brushed with chocolate and refrigerate until cool.
Chocolate Topping Recipe
- 1 cup cream
- 1 Tbsp. cornstarch
- 2 eggs
- 4 egg yolks
- 6 oz. semi-sweet chocolate
- 1 cup sour cream
- whipped cream
- chocolate shavings
Directions
Combine cream and cornstarch and mix well. Add all ingredients except semi-sweet chocolate in sauce pan over medium heat, stirring constantly. Let thicken, but do not boil. Remove pan from heat and add semi-sweet chocolate. Combine until melted. Pour over brittle layer then let set. Cover with whipped cream and garnish with chocolate shavings.
