Recipe: Maui Thai Curry with Opakapaka
I was at Mana Foods in Paia when I saw my friend George, the long-time chef at Cafe Des Amis. The next thing I know, he gives me a tutorial on cooking Thai curry while we pick up groceries together. Maui is beautiful, but the people here make it even more beautiful!
2 Tablespoons Oil
4 Leaves Kaffir Lime whole
2 Pieces Lemon Grass, ground or finely chopped
6 Cloves Garlic, finely chopped
2 Cup Onion, Julienned
3 Cup Bell Pepper, Julienned
1 Root Turmeric, peeled and finely sliced
1 Root Ginger, peeled and finely sliced
2 Teaspoons Curry Paste, Red, Green or Yellow
4 Cups Coconut Milk
1 Teaspoon Sugar
6 Tablespoons Fish Sauce
1 Teaspoon Curry Powder
2 Pounds Opakapaka or other white fish filleted
1/4 Cup Thai Basil leaves thinly chopped
1/4 Cup Cilantro leaves whole
Saute first 8 ingredients until desired tenderness. Add curry paste. Slowly stir in coconut milk. Add fish sauce and sugar. Add basil and cilantro. Sprinkle curry powder on fish fillets and grill or saute separately. I like to add the fish on top rather than cook in the curry sauce. Enjoy!
