Tasty “Love Me Tenders” Island Recipe – Kauai Chicken Tenders

I just completed 52 weeks of Old Kauai plantation recipes and I hope that you have already enjoyed some of them. I came across this Chicken Tender recipe and I thought for all those recipe lovers, I’d share some other favorites!

Crispy Chicken Fingers with Honey Mustard Sauce Recipe

• 1 ¼ pounds boneless, skinless chicken breast halves, cut across into ½ inch thick slices
• ½ cup reg or low fat buttermilk
• Cooking spray
• 4 cups whole grain corn cereal (like Corn Chex or Corn Flakes)
• ¼ t salt
• Pinch of fresh ground black pepper
• Honey-Mustard sauce (recipe below)

Directions

Preheat oven to 400. Combine the chicken and buttermilk in shallow dish, turning the chicken once to coat with the buttermilk. Cover and chill for 15 minutes. Coat two baking sheets with cooking spray.

Put the cereal in a sealable plastic bag and crush with a rolling pin. Transfer the crumbs to a shallow dish and season them with the salt and pepper. Dip each piece of chicken in the cereal to fully coat and arrange on the baking sheets. Bake until cooked through – about 8 min. Let chicken cool slightly on baking sheets, it will become crispier. Serve with the mustard sauce. Makes 4 servings.

Honey Mustard Sauce Recipe

• 1/3 c Dijon mustard
• 2 tsp. mayonnaise
• 2 T honey

Directions

In a small bowl, stir together the mustard and mayo until smooth. Stir in the honey. Makes 5 servings. These are “ONO”!
