Week 39 – Island Style Tropical Salsa!

Island Style Tropical Salsa Recipe

(Good with any type of fish)

  • 1 cup pineapple (fresh if possible) cut into ½ inch cubes
  • 1 large papaya cut in approx. ¼ inch cubes
  • 1 medium size mango, cut into approx. ¼ in cubes (optional)
  • ¼ cup diced onion, preferably Maui sweet
  • 1 T. fresh chives, chopped fine
  • 1 rice vinegar (or any vinegar)
  • Juice of one lime

Directions

Combine all ingredients. Let stand for at least 30 minutes if possible to allow flavors to blend. Use to top broiled, sauteed or baked fish. Leftovers are good in an omelet.
