Week 38 – Plantation Prairie-Style Beer Cake!

Plantation Prairie-Style Beer Cake Recipe

  • 1 cup butter
  • 2 cups brown sugar
  • 2 beaten eggs
  • 3 cups sifted flour
  • ½ tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. allspice
  • ½ tsp. cloves
  • 1 cup chopped nuts (walnuts, pecans, mac nuts)
  • 2 cups beer
  • 2 cups chopped dates or prunes

Directions

Cream butter, sugar, and eggs. Sift together flour, salt, baking powder, and spices. Toss fruit and nuts in about 2 T. of flour mixture. Add remaining flour mixture to butter mixture. Beat until smooth. Gradually add the beer. Fold fruit and nuts into batter. Pour into a 10-inch tube pan sprayed with Pam. Bake at 350 for 1 hour and 15 minutes.
