Week 22—Tropical Morning Beverage and Coconut Almond Granola! A tropical Sunday morning brunch favorite!

Tropical Beverage Recipe

  • 2 cups orange juice, chilled
  • 2 cups dry white wine or champagne, chilled
  • ½ cup orange flavored liqueur
  • Orange slices and strawberry slices

Directions

Combine orange juice, white wine, and orange flavored liqueur in a pitcher; blend well. Serve in ice filled wine glasses. Garnish with orange slices and strawberries. Makes 6 (6 oz.) servings.

Coconut Almond Granola Recipe

  • 1 cup sliced almonds
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup raw sesame seeds
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw sunflower seeds
  • 3/4 cup pure maple syrup
  • 1/2 cup sunflower oil
  • 1/4 cup honey
  • 1 Tablespoon molasses
  • 1 Tablespoon pure vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Directions

Preheat oven to 350 degrees. Combine all above ingredients in a large mixing bowl and toss together until evenly combined. Lightly brush a rimmed baking sheet with oil. Spread granola mixture in a 1/4 – 1/2 inch-thick layer on baking sheet. Bake for 45-60 minutes, stirring every 15 minutes until golden brown. Can also be used as a topping on yogurt or ice cream!
