Adventures of a Raw Food Diet

Yummy Raw Pad Thai


  • 2 zucchini, thinly sliced
  • 2 carrots, thinly sliced
  • 1 head red cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup bean sprouts
  • 3/4 cup raw almond butter
  • 1 orange, juiced
  • Squeeze of lime
  • 1 avocado
  • 2 tablespoons raw honey
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon coconut aminos (I love this stuff)
  • 1/4 teaspoon cayenne pepper

Mix all the ingredients with love and top with cilantro and ground peanuts — enjoy
